One of the »Eÿer Tortten« from a Göttingen manuscript (1585)

In the »Niedersächsische Staats- und Universitätsbibliothek« in Göttingen a cookery book with the following title is asserved:

Kochbuch Von viel vnd mancherley Essen/ wie die von Tortten/ Basteten/ Vischen/ Müsern/ Kalten vnd Warmen rc. zubereiten. Deßgleichen die eingemachte Fische/ Sültzfische/ Marcipan/ Letzelten/ Holipen/ Zuckerbroth/ Latwergen/ Wein: vnd mancherlei Essigk vnd wasser rc. zumachen seÿ/ sambt einem ordentlichen Register zu ende dieses Buchs/ wie iedes stuck zufinden/ mit vleis zusammen getragen vnd beschrieben im Jhar 1585.

The manuscript is carefully written and quite lengthy (225 fols.).

Eÿer Tortte

Nimb Rom milch thu es vbers Feuer/ Thue ein Eÿ groß Schmaltz dorein/ thue auch dorein etliche eyerdotter vnnd ein wenig Weitzenmeel/ vnnd ein Semmel gerört Laß dann alles vnderinander [!] sieden biß dünn wirdt/ wie ein Mueß. Laß dornach kalt werdenn/ mach ein blath zweyer finger hoch oder drey/ thue die fülle dorein vnd bachs biß gnug hat/ vnnd must viel zucker vor dorein rüerenn/ - vnnd wann mans eßen will/ So see auch ein zucker dorauff.

A platter from a batter? A sweet pancake?

Take a creamy milk and put it onto a fire, put fat (butter? lard? dripping?) into it, as much as an egg, further you have to put a few yolks of eggs into it, some wheaten flour and grinded rolls. Let boil together untill these things get dilute like porridge or mash. Then let cool down and give it the form of a pancake, that is two or three fingers high (or: give the batter the form of a platter or pan with a depth of two or three fingers?). Put the stuffing into it and bake untill it is done. Previously, you must stir much sugar into the batter (or into the stuffing?) - And when you want to eat it, strew sugar onto it.
